Ingredients:

. 1 cup flour

. 2 tablespoons rice flour

. 1/2 cup sugar

. 1/2 cup milk or yogurt

. 1 teaspoon baking powder

. 1/2 teaspoon baking soda

. 1/4 teaspoon salt

. 2 teaspoons cardamom powder

. 2 large separated eggs

. 1 tablespoon Golab (rose water)

. 1 tablespoon pistachio powder

. Brewed saffron

. Butter

First of all, to prepare to bake the Yazdi cake before doing anything you need to turn on the oven and heat that to 180 degrees. Next, grease the cupcake molds with butter. Ok now let’s mix all the dry ingredients: flour, rice flour with baking powder, baking soda, and also add salt, and cardamom powder. Sift three times into a suitable bowl and stir them finely until all ingredients combine well.

Select two bowls and separate the white and yolk from each other, beat high speed the egg whites until stiff, and in the other bowl beat the yolks with sugar for a few minutes the yolk should become creamy.

Add milk, butter, Golab, and enough saffron to the egg whites then stir them slowly with the hand mixer for 2 minutes, if you like you can use yogurt instead of milk. Following that add the flour mixture slowly and in several stages to the egg yolk mixture, stir, and smooth all the ingredients until your cake mix is consistent. In the next step, add the mix of egg whites and slowly stir that ( the key is the ingredients should be mixed together gently so that cupcake does not break )

Finally, add pistachio powder to the cake mixture then pour the mix into the cupcake molds, filling only three-quarters of the molds. Grease over the cakes and you can add sliced pistachio, almond, or sesame over the cupcakes and put them into the oven. After 25 to 30 minutes your cupcakes turn golden brown so cake Yazdi is ready, remove them from the oven until cool a little.

These Iranian cupcakes are so aromatic because of using the cardamom powder, rose water, and saffron. The fantastic and delicious smell of these cupcakes spreads everywhere, serve your tasty and aromatic Iranian cupcakes or cake Yazdi in a beautiful dish and enjoy them.

Bon Appetite!
