“Gaz” one of the famous Iranian sweetest

Gaz is a traditional Iranian sweet made from the sap of a specific tree called Gaz Angabin. This sap is a kind of white and honey-like edible substance that is produced on the Gaz tree. Iranians made Gaz from this sap with sugar, egg white, and pistachio or almond slices, and the production history of this product reaches more than several centuries.

Gaz is one of the few sweets in which flour, starch, and oil are not used and despite its long shelf life, no unnatural additives such as colors, essences, and preservatives are used in its production. It is interesting to know that the sap of this tree is very beneficial for the human body.

The first and basic Gaz is the flour Gaz, and over the years, Iranians have made different tastes and forms of Gaz. Saffron Gaz is a combination of the basic taste of Gaz with saffron and chocolate Gaz is a new flavor of this sweet that is a mix of Gaz and chocolate powder. In the past, Gaz was well-known for having slices of pistachio but nowadays you can find Gaz with other nuts like almond Gaz.

Gaz is a popular souvenir from various cities in Iran. One of the most common cities for making Gaz is Isfahan, and it is known as Isfahan Gaz throughout Iran. People take this delicious sweet for their friends and family when they go to these cities as a sweet memento and also Gaz is an interesting Iranian souvenir for people around the world.

There are cardamom powder and Golab (rose water) in the basic form of Gaz that gives a wonderful aroma to this traditional candy, as well as, today different companies produce this product with other spices like cinnamon powder which gives a new experience to the lovers of this sweet.
