The recipe of a tasty sandwich

Boz Ghormeh is a delicious food from Kerman (an Iranian city). In less than 30 minutes you can make a homemade sandwich with a unique taste. You can quickly prepare this classic sandwich for your work lunch and enjoy a fantastic meal.

If you are looking for a very different and interesting traditional sandwich, try Boz Ghormeh. This dish is prepared with beneficial ingredients, due to the presence of peas and meat, it is very nutritious and contains protein. Kermani people made this food with goat meat which is why the name of that is Boz Ghormeh, in Persian Boz means goat.

Ingredients:

.1 cup peas

. 500g meat, chopped

. 4 onions

. 5 cloves garlic, grated

. 2 cup Kashk (curd)

. Salt and pepper to taste

. Turmeric to taste

. Mint powder – for garnish

. Onion and garlic – for garnish

. Oil

Choose a pot, wash the peas and add them into the pot then cook them with water. The original Boz Ghormeh is prepared with goat meat, it is better to use shoulder or leg meat for cooking this food, totally you can use each type of meat for cooking that. To prepare meat, first, slice the onions and fry them in a pot a little following that add grated garlic to the onion fry them together, and finally add chopped meat to the pan, stir all ingredients then add turmeric and pepper.

At this step, add 2 cups of water and cooked peas to the meat, cover the pot door, and when the water boils reduce the flame after 2 hours add enough salt to the meat then wait 1 hour until the meat is completely cooked. When the beef is cooked, beat the ingredients well with a meat grinder. Now, it’s time to add Kashk, add the Kashk and let it mix for about a quarter of an hour.

In Iranian cuisine, there are some specific recipes for making garnish. For example, fried onions and garlic are commonly used to garnish foods, particularly those made with Kashk. To garnish the Boz Ghormeh, in a separate pan slice the onion and fry well with oil until the onion turns golden. Or you can make fried garlic and also fried mint powder, all of these offers are wonderful to accompany the Boz Ghormeh.
