Khoresh Bademjan (Eggplant stew)

Today I want to write the recipe for my favorite Iranian stew, Khoresh Bademjan, or the same eggplant stew is a delicious and rich food. I really like that and I recommend you to cook this dish and serve that for your family members.

Bademjan means eggplant and the most important ingredient in this food is that. Khoresh Bademjan is a traditional stew from Hamedan ( An Iranian city). As always, tomatoes and meat are wonderful companions of eggplant, in this dish, the combination of these together creates a wonderful taste.

Ingredients:

. 5.6 eggplants, sliced

. 3 tomatoes, sliced

. 500g lamb

. 2 onions, sliced

. 2-3 garlic cloves

. 1 tablespoon tomato paste

. Salt and pepper to taste

. Oil for frying

. Ghooreh – optional

First, in a pot fry sliced onions. When the onions become light add the meat, and garlic and fill the pot with hot water, as much as you need to cook meat, when the water is boiled cover the pot. Waite to cooking meat with onions, In this distance, wash and slice skinless eggplants. In a pan, fry sliced eggplants finely.

After that, wash and slice the tomatoes. In the pan, fry sliced tomatoes finely. Then fry the tomato paste in that pan. When the meat is cooked add fried tomato paste to the pot, after that add fried eggplant and tomatoes to the pot of meat. Keep a little of the fried eggplant and tomato to use to garnish the stew. Let the stew boil a little with fried eggplant and tomato until the combined flavors together. Now your Khoresh Bademjan is ready, garnish the stew with fried eggplant and you can serve that with rice.

In Iran, people serve Khoresh Bademjan with brewed aromatic Persian rice with saffron garnish. There are some suitable side dishes for this tasty dish:
