An exciting side dish with Olives

Hello, today I want to introduce to you an Iranian traditional side dish. Zeytoon Parvardeh is a side dish that comes from the north of Iran. There are many beautiful olive gardens in the north of Iran, and over the years talented Iranian chefs have made delicious and interesting combinations of olives that have been passed down to us generation to generation.

Zeytoon means olive and Zeytoon Parvardeh is a mixture of olive with walnuts and pomegranate paste. This side dish is a good combination for many dishes, especially fish dishes, you can buy the ready Zeytoon Parvardeh or make this easy recipe in your home.

Ingredients:

. 500g pitted olives

. 200g walnuts

. 1 cup sour pomegranate juice

. 1 garlic bush

. 1/3 cup pomegranate paste

. 3 tablespoons dried or fresh mint

. 3 tablespoons dried or fresh cilantro

. 1/2 cup pomegranate seeds – optional

. salt and angelica powder to taste

To make this delicious side dish, we pour walnuts into the grinder and grind them into powder after that if you use fresh cilantro and mint chop them finely. In the first step taste the olives if olives are salty wash them and put them in cold water and then use them for this side dish.

Pour olives into a big bowl and add ground walnuts to the bowl. Next, add fresh chopped herbs or the dried powder of them to the olive bowl. The key is, that it is better to use fresh herbs instead of dried herbs. Now, we crush the garlic completely and then add it to the mixture. In the following. add pomegranate paste and juice to the olives, and add salt and angelica powder.

Mix the olives with the paste and spices, using your hands to thoroughly marinate them. However, be careful not to crush the olives. Then cover the bowl and put the Zeytoon Parvardeh in the refrigerator. After two hours, your side dish is ready and you can eat that or serve this tasty side dish with different food.
