Doogh (Ayran) is an Iranian traditional drink that is served with different types of food. Many traditional dishes must be served with Doogh like Kalaneh which is a Kurdish snack or Doogh and Gosh-e-fil which is a traditional snack from Esfahan. In the past, this salty drink was made with high-fat yogurt that was diluted with water, then the fat was separated using a special “Mushk”. It was considered one product of butter.

Nowadays, this product is produced in factories. Still, in many cities and villages of Iran, people make the traditional version of that because traditionally Doogh is very tastier than the other one in supermarkets.
