“Qottab” is a well-known Iranian sweet

Qottab is an Iranian traditional pastry that is a souvenir of Yazd, one of the oldest and most historical cities in Iran. Due to its unique climate, this city also has its unique cuisine. Yazd people have hot summers and cold winters so they eat cool and light dishes in summer. On the other hand, in winter, they cooked foods with a warm and sweet nature to keep themselves warm.

As a result, there are many delicious and traditional sweets in the cooking history of this city. All these sweets are tasty and famous among people. One of them is the Qottab, which is a delicious and nutritious pastry.

Ingredients:

For the dough:

. 1.5 cup pastry flour

. 1 egg

. 0.5 cup sweet yogurt

. 1/4 cup butter

. 1 tablespoon icing sugar or honey

. Half a teaspoon of baking powder

For the middle:

. Half a cup of walnuts

. Half a cup of almonds

. 3 tablespoons sugar

. 1 or 2 tablespoons Golab

. 1 teaspoon cardamom

. 1 teaspoon cinnamon

In the first step, put the melted butter together with the egg yolk, baking powder, yogurt, and icing sugar in a suitable bowl and mix them well with the help of a whisk. After the mixture is completely mixed, now go to the next step. The key is the yogurt has to be sweet and low-fat to cook Qottab

In the second step, now it’s time to add flour, but before adding, be sure to sift it two to three times. Then, add the flour little by little to the ingredients and mix until a soft dough is obtained. At this stage, be careful that the amount of added flour can be slightly different depending on the type of flour, the size of the yolk, and the concentration of the yogurt. Knead dough and let it rest for an hour.

In the fourth step of how to make Yazdi Qottab, you must prepare the middle mixture until the dough rests. Powder walnuts, almonds, sugar, cardamom, and cinnamon in a mixer then pour into a bowl. Add a spoonful of Persian Golab (rose water) and mix them gently. The middle material should be soft enough to easily form a ball with your hand.

Spread the dough with a rolling pin after that mold it with the help of a glass or a cutter. Next, Take some of the middle materials and roll them into hazelnut-sized balls, then place them in the center of the dough. Stick the edges of the dough together. You can gather it in its traditional shape.

In the last step, cover the oven tray with greaseproof paper and put the Qottab’s inside it. Preheat the oven to 180 degrees Celsius. Finally, put it in the oven for 20 minutes to cook. When the sweet Qottab is cooked, remove them from the oven tray and roll them into icing sugar. Your tasty sweet is ready, put them in the desired dish and garnish them with pistachio powder.
