Joojeh Kabab

Joojeh Kabab is one of the famous and popular Iranian kababs. Iranian people eat this Kabab on different occasions and also as a dinner. It’s interesting that most people like this food, so if you are looking for a delicious Iranian food that everyone likes, chicken Kabab is the best suggestion.

In different countries and cities, people flavor meat in different ways. Chicken Kabab is one of the Iranian flavored dishes that marinate chicken with saffron, onions, and various spices. Of course, over time, different recipes have been invented to flavor Joojeh Kabab, but this recipe is an old and original recipe of this dish.

One of the most beautiful experiences I’ve had was when I cooked Joojeh Kabab for my non-Iranian friends. My friends from different parts of the world are very fond of this Kabab and the first time I introduced this dish to them, they liked it too much.

Most of the time, especially in Iran people order this food from restaurants because grilling meats at home is not easy. Another reason is increasing the amount of meat and seasonings used can enhance the flavor of your food, especially if you find a good Iranian restaurant. Undoubtedly, if you have a barbeque in your house it is a good decision to grill chicken at home, as a result, you can prepare the seasoning ingredients according to your preferences, in addition, cooking Joojeh Kabab together specifically on a holiday, can become a family activity.

Therefore, Iranians make this dish with their family in the Sizdah Be-dar which is an Iranian traditional event, in this holiday family members go out and spend time together in nature. There are places in the forests for making fire, where people make fire by buying charcoal and then grilled chicken. In stores such as protein shops, they sell ready-made, marinated chicken that is ready for grilling. Which makes cooking Joojeh Kabab very easy!

What is the meaning of Joojeh?

Joojeh means chicken and Joojeh Kabab is grilled chicken. In this recipe, chicken is seasoned with saffron, grilled to perfection, and served with a dish of rice. The constant companion and complement of Joojeh Kabab is grilled tomato, which is always served with this dish.

Ingredients:

. 1.5 lbs. (700g) chicken thighs, boneless and skinless

. 1 large onion

. 1 tablespoon lemon juice

. 1 tablespoon ground saffron, brewed saffron

. Salt and pepper to taste

. 2 tablespoons olive oil

. Tomatoes – optional

First, chop the onion. After that, chop the boneless and skinless chicken thighs. In a suitable bowl mix the chopped onion, chopped chicken, lemon juice, olive oil, and brewed saffron, at this step you should add salt and pepper too.

Mix the ingredients very well and make sure they are well-coated. Cover the bowl and refrigerate for at least 4 hours or overnight for the flavors to meld. Over this time, chicken seasoning with saffron, onion, and spices.

Preheat your barbeque or oven to medium-high heat. For grilling chicken, you can use a grill, barbecue, or even an oven. If none of these are available, you can also use a pan. When the chicken is marinated, thread the chicken onto skewers. Wash tomatoes and cut them in half. Thread the tomatoes onto skewers.

Grill the Kababs for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Serve Joojeh Kabab with rice or flatbread. You can brew saffron and mix it with a little rice and garnish the rice dish with saffron rice.

Side dishes:

Sabzi Khordan

A platter of green and fresh herbs. Like basil, chives, spring onions and other fresh herbs.

Grilled green peppers

You can grill fresh green pepper and serve that with Joojeh Kabab. “You can grill green peppers to your preference, whether you prefer them spicy or sweet.”

Garlic Torshi

It is an Iranian traditional pickle that is made with garlic.
