The oldest fast food in the world

Kalaneh is an Iranian traditional food that is Kurdish and known as the world’s oldest fast food. A bread with the taste and aroma of vegetables, which is prepared with mountain herbs in the spring season.

Ingredients:

. 2 cup flour

. A little bit of water

. 1.2 teaspoon salt

. 50g butter

. 1 bunch of mountain herbs or chopped chives and spring onions

Pour flour into a bowl and add the salt on it, mix them, and add a bit of warm water to the bowl, gradually stir water into the flour until a smooth dough forms. Your dough shouldn’t be sticky, but it shouldn’t be dry either. This bread is made without yeast but since the dough is very thin, the result is a soft bread.

Knead the dough and then cover that after that, let it rest for 10-15 minutes. Sprinkle a little flour on the work table and divide the dough into 8-9 parts. Now, roll out each part of the dough thinly with the help of a rolling pin. Then stretch the dough with your hand a little to make it thinner. This work requires skill and experience. Spread dough on the table pour chopped chives on one side of the dough and turn the dough on the other side, stick the sides of the dough together with your fingers.

Now, put a pan on the flame until it gets hot. Be careful, the flame should be medium because the bread will burn quickly and if it is the lowest flame, your bread will be dry and hard. Put the dough into the pan, when one side of the food is cooked and it gets brown spots, turn the dough over to cook on the other side.

When the bread is baked. Serve it in a dish with a little butter. If you want to enhance the color and aroma, consider adding a little saffron to the bread.
