Torshi Hafte Bijar

pickle”Hafte Bijar” is a 150-year-old pickle. This pickle is a traditional Iranian mixed pickled that has gained special popularity due to its unique aroma and taste, which is due to its special magical spices. And it is part of many Iranian dishes.

What is the meaning of Hafte Bijar? What are the hafte bijar torshi ingredients?

It is interesting to know that this pickle is known as Hafte (seven) Bijar (farm) due to its ingredients which include seven vegetables, seven spices, seven types of dried green leaves.

Those green dried vegetables and pickled spices are two important and effective ingredients in the taste of pickles that are used in most traditional pickles.

Ingredients:

. 1 Large eggplant, cubed

. 2-3 medium carrots, sliced

. 1 cauliflower, separated into florets

. 1 cup small cucumbers or 2 medium Persian cucumbers, chopped

. Celery, chopped – optional

. Small ratte potato – optional

. 2-3 green or red hot pepper to taste

. 1 cup red vinegar

. 1 cup boiled water

. 2 tablespoons salt

. 10 cloves garlic

. 1 tablespoon sugar

. Green leaves (fresh or dried) including tarragon, savory, mint, parsley, and coriander to taste

. Pickled spices

First step

Wash and cut the vegetables (eggplant, carrots, cauliflower, cucumbers…) into bite-sized pieces or slices. After that, layer sliced vegetables in a jar

Second step

In a saucepan, combine boiled water and vinegar with salt, bring this mixture to a boil, and let it simmer for a few minutes.

Next step

Allow the vinegar mixture to cool slightly, then add garlic I recommend using whole garlic cloves. The more garlic in the pickle, the tastier it will be. hot peppers, and spices, a mix of green leaves (fresh or dried). Mix them well and then test.

Finally

Pour the mixture over the vegetables in the jar, making sure the vegetables are completely covered by the liquid. Seal the jar tightly and let it sit at room temperature for 2-3 days.

After few days, move the jar to the refrigerator. The pickles will continue to develop flavor over the time and can be enjoyed within a week or two.

This recipe can be adjusted according to personal taste preferences by adding more or less certain vegetables or spices. It is a versatile pickle, so feel free to experiment!
