One of the most important points of making pickles is that fresh vegetables must be kept in vinegar and spices for a long time to become pickles and take on the flavor of spices and vinegar. How long the pickles are kept in the vinegar, would have a better taste. For example, one of the famous Iranian pickles is the garlic pickles, you can find 5-year-old and 7-year-old homemade garlic pickles. It’s interesting to know that a 7-year-old garlic pickle has medicinal properties in Iranian traditional medicine.
