Mirza Ghasemi

Ingredients:

. 9 eggplants

. 4 tomatoes

. 9 cloves garlic

. 3 tablespoons tomato paste

. salt and pepper to taste

. 1 teaspoon turmeric

For cooking Mirza Ghasemi, wash eggplants, and tomatoes then grill them. When the vegetables are cooled down a bit, take the skin of eggplants and tomatoes. Mix them, for that, you can mash them or mash them completely with a cleaver.

On the other hand, chop the garlic cloves very finely. Next, pour mashed eggplants and tomatoes into a suitable pan and add chopped garlic to the pan. In this step, pour salt, pepper, and turmeric into the pan.

In the next step, place tomato paste in the center of the pan, fry it briefly, and gradually mix in hot water to blend the tomato paste. Mix all ingredients and fry them for 2 to 3 minutes. Finally, if you want to add an egg, fry the egg and place the fried egg on top of the food. Adding eggs and the number of eggs is up to you.
